From the collaborative vision of Crystal Springs Resort CEO Julie Mulvihill and COO Robby Younes, the revealed concept draws inspiration from the natural world. Inspired by the lush terrain of the area, the new Restaurant Latour is intended to bring the outside in. The dining room showcases a miraculous wall of salvaged tree bark paneling, stone from local quarries, antique light fixtures, and custom made furnishings. INC Architecture & Design, a team who are well known for their hotel, restaurant, and residential work in Manhattan, executed the redesign. Local artist artwork and input were also incorporated into the finishing touches of the décor.
Chef Aishling Stevens and chef de cuisine Matt Laurich encourage diners to embark with them toward a dining experience influenced by naturalistic modernism. The menu allows guests a choice between a four-course prix- fixe menu or a seven-course chef’s tasting. Seasonal elements are highlighted in a modern and stylish way with a tangible connection to the area’s surroundings, utilizing fermentation, preservation, foraging, and local sourcing.

An alternative to the full dinner options offered at Restaurant Latour, the Somm Table allows for a less formal, yet equally enjoyable experience.
